Weight in - wanna know?? I mean do you REALLY want to know?? Well, I sure did! I have been measuring and doing low fat this and fat free that all week. It wasn't all bad tho, I mean I can honestly say that I have eaten more fruits and veggies this week then I have in long time and even better - my house is cleaner then it has been in months! No more chillin in front of the TV, zoning out and eating my way to another size.
Ok, back to what you are are waiting for. Drum roll, please....... I lost 4.5 lbs!
Did you hear that, 4.5 lbs in WEEK! I can't even tell you how excited I was! If I lose another 4.5 lbs this week, it will be a thing to celebrate. I will be below the number I swore I would NEVER hit (which I have plus 7 lbs.) I can't wait to see that new digit.
I have to say, breakfast is still a challenge for me. I thought when our church time changed from 9am to 11am the beginning of this month that I would have plenty of time..... nope. I still managed to walk out of the house in rush, with nothing but a mint in my tummy. We make our weekly breakfast on Sunday - the eggs, bacon, potatoes and toast, it is something I look forward to and I can honestly say today was no different and that is such a great thing. I got my egg, canadian bacon and toast today and it was great.
I wanted something sweet a few hours after our late breakfast and realized I wanted a shake.... and how does that happen... with light coconut milk, of course! I had a great pineapple coconut smoothie made with just that, coconut (milk) and pineapple chunks in their juice. Added a bit of frozen orange juice concentrate and ice. We wanted a bit more coconut flavor and put in a bit of Capella's pina colada drops and 2 packets of Truvia. Ahhh, that hit the spot.
Dinner was bit later - just finished actually. we had spice beef tacos and there was nothing wrong with this at all. When I saw the recipe it was 2 corn tortillas for 7 points and I thought that will work. But when I read the measurements for the toppings I thought there was no way that would be enough. It called for 1/4 cup of meat, 1/4 cup of lettuce and 1 T of cheese. Well, I will give some credit to those great Weight Watcher recipes again... I actually used less than called for toppings and was able to add another taco for an addtional 1
1 point. Love feeling this full and having my food full of flavor. We added cilantro, tomatoes and sour cream (daisy fat free is the BEST and 0 pts.)
Now I have 18 points left for dessert.... is is sad that I automatically thought that is 3 bowls of cereal?? LOL oh well, I am thinking strawberry shortcake kabobs might work a bit better. What do you think??

Day 6
Saturday, January 29th 2011
I love the weekends - I love the time with my family, all 4 of us being together and enjoying each other. What I don't love is the chore list that comes with it. I do find some positive out of it.... first, the results are always so great and secondly, it keeps me distracted so I don't eat.
I had to go through a box that was incredibly overwhelming today - all my reciepts and statements for the entire year of 2010. My hubby armed me with a peanut butter chocolate smoothie and I set to work. As I was working on this task, taking up the whole kitchen table to do so, I swore it would not happen this year. Who wants to hold me to this??
My bro, his wife and 3 awesome kids came over for dinner.... pizza and movie with them - the BEST!!!
Joe made pizza (I LOVE his pizza!) I had 4 slices - 2 of each kind, and a few carrot sticks, no ranch for me. We also had beignets that we made last week that we reheated and made icing for - doughnuts are my fav. I had 3.
Yes, today was over my points but I am not hungry and I can say that I really enjoyed my food, didn't over eat and by no means feel deprived.
Here's to a successful weigh in tomorrow!!

Day 5
Friday, January 28h 2011
Today I had a pajama party with my little girls - we stayed home and watched movies in our PJ's all day.... she thought is was the coolest thing and let's face it, it was a glorified way for me to not get ready today!
My little ones wanted waffles today and my immediate response was - No, I can't handle you having those and I can't! But then I thought about it and realized I could have them.... Oh, happy day! I had purchase the nutrigrain low fat waffles and it was 4 points for 2 waffles. I topped with spray butter and Aunt Jemima butter lite syrup (the best in my opinion) I paired this with some canned tropical fruit (drained and rinsed) and a half cup of milk. We were a group of sugary, sweet little girls for breakfast.
I wanted to keep my points low today because it's Friday and I have a Date In with my hubby. He picked up a movie on his way home and I put some Junior Mints (16 mints for 3 points!) in the freezer this morning, I will explain.... we make popcorn and eat it with the frozen Junior Mints, not just with it but in the same bites. If you haven't tried this you are probably thinking WHAT?! but trust me, it is the BEST!
Dinner consisted of Pan seared chicken with garlic sauce, lemon pasta and broccoli. The chicken and pasta were both new recipes - thank you, weight watchers online! I am usually not a huge fan of garlic and when I saw that this recipe called for 12 cloves of garlic I was hesitant but we tried it anyway... so glad we did! The chicken itself was seasoned and quite honestly it was a little too much but the sauce rocked. The pasta was a new one for me... it had an egg in it. Ummm, yea that freaked me out a little. I trusted it and again, so glad. Yummy dinner with 10 points left for our movie!

Day 4
Thursday, January 27th 2011
So today was a whirlwind - I felt like I was running around until Joe got home from work. I grabbed a babybel cheese and a raisin oatmeal bar on my way out at 11 30 cause I just hadn't had time to eat breakfast. 4 points down.
I was thrilled to go to lunch with my sis today - love those outings however, the kids make it a little hectic but hey, we are never short on excitement! We were stumped on where to go.... on a non diet day we don't have this problem but when you are trying to count these points, it makes you really think what you are putting in your mouth.
We went to Zupa's and it was devine! I had the tomato basil soup and a sandwich. I had checked online and found the points for the soup but that was it. When I ordered my meal, they asked if I wanted the orzo pasta that came with my soup, I said no. I was then asked if I wanted cheese or sour cream, again I answered no. It's crazy how fast those points and calories can add up when you aren't paying attention. I also got the Turkey Spinach Artichoke panini - I had no idea how many points is was but man, it sounded awesome. I ended up eating half of my sandwich and soup...again, by paying attention I saved eating more and adding more points. Still questioning the points on the sandwich but from what I can tell, it was probably 9 per half.
We had baked salmon with dijon topping for dinner. I paired it with a baked potato and an artichoke. I topped my potato with the fat free stuff but used 2 tsp of mayo for the artichoke. I ended up eating only 1/2 of my mayo serving so... wahoo! It was 15 points for dinner so all in all, my 2 meals were more than average but hey, I still have 6 left for dessert :)
I am thinking one choco-peanut butter cookie (2pts) and a ice cream sandwich (4 pts)

Day 3
Wednesday, January 25th 2011
I have to admit something - I weighed myself today... I was scared but was thrilled when I saw I lost 2.5 lbs!
I decided this morning I wanted to make myself a BIG breakfast, too bad I didn't get to it until 11:30AM! I need to work on it, I need to work on getting up earlier and eating when I get up. Anyway, back to breakfast.... I made toast, bacon, eggs and strawberries. How's that for a breakfast - this diet is all about changing the food and lowering portions, no need to neglect yourself. I used canadian bacon, Sara Lee wheat bread, and had one egg.
Lunch was challenge - because I ate so late in the day, I didn't eat before I took the girls to the movie for a birthday party. I got a small popcorn and rootbeer for my 4 year old - the girl behind the counter made sure to tell me a medium popcorn was only 75 cents more - it is crazy how we pay to get more food when in reality, we dont need it. I ate a babybel on the way to the movie and snuck in a few treats for me so temptation wouldn't be bad. I did have a few handfuls of popcorn but nothing like the normal case. We left that theater with over 1/2 of a SMALL bag left - All I can say is WOW!
Dinner was nachos - much anticipated and very good. I found the basis of the recipe on a friend's blog and that was awesome. We made chips out of our corn tortillas - 1 point per tortilla, that makes 8 chips! It was 10 points for a full plate of food.
I am now drinking my chocolate fix for the day - General Mills International House swiss mocha (sugar free) MMM, only one point!! I have 9 left and am trying to figure what to do with it....
I found a recipe for Chocolate and Strawberry stuffed french toast - I had a request to post it so here it is...
http://www.foodnetwork.com/recipes/chocolate-and-strawberry-stuffed-french-toast-recipe/index.html
Can you believe it is only 6 points for 2 pieces of this lovely breakfast!!! I just hope it is as good as it sounds.

Day 2
Tuesday, January 25th, 2011.
Today I realized I was more bored then hungry but found myself wanting to sit on the couch, turn on an episode of Cougartown, and eat. I decided totake my sister's idea from a blog she recently found and I made myself a chore chart and a list of all the projects that need to be done around my house. When I found myself wanting to eat, I referred to my list. I cleaned my 3 bathrooms, steam mopped the floors, and cleaned out the cupboards and storage totes in those rooms. YAY ME!!
I had yogurt and an oatmeal raisin bar for breakfast, leftover soup for lunch and an amazing dinner. I found a recipe on Foodnetwork.com for a healthy fettichini alfredo made with califlower puree.
http://www.foodnetwork.com/recipes/food-network-kitchens/fettuccine-alfredo-recipe2/index.html
I do NOT like califlower and find myself not getting enough veggies so I thought this might be a good idea. Joe made this while I was at a meeting and also made bleu cheese dressing from a recipe I found on weight watchers. We paired that with a green salad and the pasta and it was DELISH!!! The pasta was 8 points. I finished off my day with a cookies n cream shake made with fat free frozen yogurt and reduced fat oreos and had 3 points to spare.

Diet road... again.
I have spent most of my adult life not liking what I see on the scale. Don't get me wrong, I am not the type of person who stares at the mirror, hating the person staring back at me. I like to think I am comfortable with myself and all that makes me who I am. I just dislike how much of me there is.
I started another diet - again. I am hoping my monitoring my progress/ failures and putting out for all to see I might be more accountable for what goes into my mouth.
Monday, January 24th, 2011.
I am at my highest weight, ever. I decided to sign up online with Weight Watchers and see how I do... I don't know if it because I signed up and am now invested or if it is because I am sick of carrying around this heavy girl but I am excited for this journey.
Day 1 - I am proud to say I used all my points which was no small task considering I had 28 left at dinnertime! I had 2 servings (1 cup each) of my slow cooker chicken tortilla soup which was 6 points per serving. I added 1 serving of cheese and sourcream between the 2 bowls and a peice of cornbread. I then went to the store to pick up all the food I would need for the next 2 weeks, came home, and treated myself to a skinny cow chocolate peanut butter ice cream sandwich... 4 points and worth every one!
I got a bunch of things at the store and the Weight Watchers app for my iPod was totally helpful and made it so easy to find the points for food while I was there.
I LOVE this plan having fruit as 0 points! I was a little bummed as it is winter so we basically get apples, oranges, and bananas or pay an arm and a leg for the others. I then found out that if I get canned fruit (pears, peaches, fruit cocktail) in water or if I drain and rinse them, they are still 0 points. YAY!!
