Love me some bagel thins :-) I made a sweet almond orange cream cheese spread. Oh Heaven! It was 6 points for the bagel and spread.

Here is the recipe -
Sweet almond orange cream cheese spread

1 - 100% whole wheat bagel thin bagel
1/4 cup toasted whole almonds, chopped
1/2 cup golden raisins (I used craisins)
1/4 cup honey
8 oz reduced fat cream cheese
1 teaspoon orange zest
a pinch of salt (our almonds were salted so we omitted this ingredient)

Preheat oven to 400. Cook almonds ofr 5-7 minutes on a cookie sheet until they are fragrant. Remove and let cool to the touch. In a food processor add the cream cheese, raisins, orange zest and honey. Pulse to combine and scrap down sides if needed. Add almonds and pulse to combine into cream cheese mixture. Toast bagel thins and spread with 2 Tablespoons of spread.

There it is - so good and filling... I just have to be sure to not eat every morning.

I had leftover ziti for lunch - my hubby is so sweet, he made sure that there were 2 -1 cup servings in there for me. Love the support. I had some fresh pineapple as well and again, LOVE that I can have fruit whenever and I don't have to worry about the points.

Dinner consisted of an amazing new recipe as well - probably one of my top 5.
Baked creamy chicken taquitos. I found this recipe on a friend's blog site - she was a big inspiration for me. She started weight watchers about 2 weeks before and has been so positive and cute about it and also put her success and recipes on a blog.

I did notice that the recipe called for cheese (besides the cream cheese) but it didn't have an amount. I added 1/3 cup of shredded mexican low fat cheese in there and it was 2 points for 12 servings. I also noticed that I liked the corn tortillas much more than the flour - man, that is insane!

Had points left and I let myself have a rocky road brownie - heaven on a plate, even with the tiny portion and to be honest, it was just enough.
