Happy Valentine's Day!!! Oh, I am so grateful for all that I love... my beautiful little girls, a wonderful and totally amazing husband, and a great group of family and friends.
I woke up today to the tantilizing aroma of bacon. REAL bacon, not canadian bacon. Oh, how I have missed this and I jumped from my bed much like a child on Christmas morning. I had pancakes and bacon waiting for me - did you know that it is 4 points for 3 pieces of crisp bacon? I know now and it was delicious! I have an amazing pancake maker in my family.... my hubby throws in some of this, some of that and everytime it comes out so tasty. My only wish was for real butter and syrup but I need to draw the line. Afterall, I am still on a diet and there is a day ahead of me with more treats to eat.
I wanted to keep lunch semi light as I had a yummy dinner planned for Valentine's Day ;)
Had leftover tortilla soup with cheese and sour cream. Yep, still had some left and it was still just as good.
Dinner was absolutely divine!! I found a few recipes on Weight Watchers and one online but it had nutritional info so I was able to figure out the points pretty easy.
We had Beef tenderloin with blue cheese and herb crust, yorkshire pudding with a garden salad and blue cheese dressing. Oh, so yummy and how many points for all this food? 3 oz of beef with blue cheese and herb crust - 9 points. Yorkshire pudding - 2 points each (I had 2) Blue cheese dressing - 1 point and a 0 point salad.
Finished off our night with Strawberry Napoleon. The cream was amazing and it was just the right textures and tastes. Crunchy filo dough layers, smooth sweet cream flavored with orange zest and a little sugar and fresh strawberries. It was 3 points a serving.
Perfect meal for a great day. Oh, did I mention the lovely flowers I got???

Day 21
Sunday, February 13th 2011
Weigh in... ugh, it was not what I wanted. Down one pound, that is IT. I guess I should be glad that I didn't stay the same or even worse, gain. I am so close to hitting that next digit it is making me crazy! Oh well, another week, another chance.
Gotta grab breakfast on the run.. again. Newton fruit crisps plus cheese - easy to grab and good source of protien. I had a crazy day at church - I never would have thought that 3 hours could be so crazy and so stressful. I had to take on another task that was fully unexpected and to top it off, my little one was beyond tired so she was fussy for pretty much the whole time. We survived and when we were leaving the room and I was offered Hershey Kisses as I went, did I take it. You betcha! I thought it was more then earned but it was a bit impulsive. Worth 2 points tho
Time for my weekly Sunday brunch. I look forward to this almost as much as I do the family time we get after church. 2 pieces of toast, egg and canadian bacon. We had a bit of a rush this afternoon as we had to be at my mom's within 2 hours of getting home. It was my birthday party!! I am beginning to think I am going to sabatoge myself with all that is going on this week. Family birthday party today, Valentine's Day tomorrow and my Birthday on Friday. Will I make it through the week, yep. Will there be a weight loss, I hope so.

Day 20
Saturday, February 12th 2011
Yes, another busy Saturday and my saint of a husband made sure to hand me a bagel with the sweet almond orange cream cheese as I was rushing out the door at 9am for a meeting. I went from that meeting to another appointment where I met my hubby and kiddos. Oh so ready to go home and relax about 3 minutes in and I know there is another hour to endure.
Got home, finally. Wanted to eat after all that drama and grabbed something quick and easy. Crackers and cheese it is! Had that with pepperoni and a couple of dill pickles. Yummy!!
We picked up some avocados at the store the other day and they are so ready to be eaten. Found a great recipe online (thank you, weight watchers AGAIN!) for layered mexican dip. 7 points for 1/2 a cup. Added a serving of baked tostitos chips, ground beef, lettuce and tomatoes. Yumminess! Made an amazing taco salad.
Tomorrow is weigh in and I am so stuck on eating once my kids go to bed... I decided on a bowl of cereal.
Then I had a cup of International coffee and then a Skinny cow peanut butter sandwich. Wow, I need to stop eating!

Day 19
Friday, February 11th 2011
Egg sandwich today - bagel thins, one egg and 2 slices of canadian bacon.
Nothing too exciting for lunch - made leftovers from a few nights ago. Healthy alfredo for me. It is so nice to have the leftovers put into 1 cup portions. Had some coffee cake as well - it is that good!
Did I mention going out is hard to do?? I had family visiting from California so we met up for dinner. Went to a Meican cafe that I had never been at before so I was worried. I ended up ordering a Santa Fe Enchilada and split it with my mom. It was made with blue corn tortillas layered with chicken, cheese and beans and it had a creamy tomatillo sauce. It was really good and I was proud that I didn't eat chips and salsa or beans and I split it with my mom. Not sure of the points but just went off of the weight watchers points and gave it 5 points.
I am struggling this week with late night treats - I had a bag of peanut M&M's for 7 points. Weigh in is not going to be good :(

Day 18
Thursday, February 10th 2011
Breakfast that was made for me - Special K with red berries and milk. All about the cereal as you know by now.
I made lunch today taht wasn't all that different then the old days, just a bit healthier :) Tuna fish sandwich with 1 T of mayo on Sara Lee delightful bread. Added 1 serving of fat free pringles, babybel cheese and a serving of grapes.
Oh, my favorite dinner - healthy alfredo! Love me some cauliflower puree (NEVER would have said this before) added a salad. Did I mention I found a great Blue Cheese dressing?? It is yummy and only 1 point for 2 T!
Had some International Coffee - suisse mocha. Yum! 1 point for a cup. Also had some popcorn, a skinny cow sandwich and a slice of coffee cake.... oh, little miss piggy tonight!

Day 17
Wednesday, February 9th 2011
Today was lunch with my old boss... oh, eating out is still a challenge. I skipped breakfast AGAIN and that didn't help but make me more hungry for our outing. I wanted to eat it ALL, everything on the menu. I had to make a good decision which wasn't easy when no nutritional info was noted. Grilled chicken? A salad? What is good for you and still good tasting? Well, I found the lunch section and settled for a 1/2 sandwich and a small house salad with low fat dressing on the side. The salad was a great choice, the sandwich not so much but it was yummy! Grilled ham and cheese on texas toast. It also came with fries but I figured the sandwich was enough so I just left those alone.
I got home and here comes the sweet craving again... no donuts today! I had a double chocolate sugar free pudding snack - 2 points and just the chocolate I needed.
I made dinner tonight - another weight watcher recipe - cheesy chicken enchiladas. Yea, not one of my favorites. This recipe called for velveeta 2% cheese and it tasted like such. I don't think I will make it again, to much effort and too many points. (8 points for one enchilada) At least I had my salad to help fill me up!
I was in a baking mood today so I tried a blueberry sour cream coffee cake... besides the fact that the pan I used was wayyy too small, it turned out good. Great blueberry flavor but a little dry. 4 points per slice and a 1/2 glass of milk was a great treat to end my day.

Day 16
Tuesday, February 8th 2011
Found a new grab n' go - Nabisco apple cinnamon newton crisps, 3 points for both bars. Added a babybel for some added protien and had a great 5 point on the go breakfast!
Had leftover soup with cornbread for lunch. I don't do leftovers but this soup is sooo worth it!
My hubby has mandatory 60 hour work for the next 2 weeks so tonight was kid friendly. We had quesadillas, just made sure mine was diet friendly. I swear it is all about measuring and getting the lower fat and fat free items.
Was craving serious sweets today...I stopped at the store to pick up a few things that I wasn't able to get Sunday and promised the girls a donut if they were good. Made it to the check out line and was unloading when my 4 year old reminded me of my promise. Everything pack in the cart and off the bakery we went. 1 sprinkle and 1 cake donut later we were back in line. I have to say, I LOVE donuts! I didn't get one for myself and was proud. We came home and had lunch and the girls got their treats. My little one ate 1/2 of her donut (the cake one) and didn't want the rest. Oh, what torture! Did I eat it? Yes, yes I did. 3 points but was it worth it? When I think about it now, probably not but at the moment it was.
I finished my day with a banana and a skinny cow peanut butter sandwich. YUM!

Day 15
Monday, February 7th 2011
Another day, same diet... I want this to be a great week and how do I make that happen? Well, I planned our next 2 weeks of dinner meals and went to the store. I can tell you the best time to go to Costco and Walmart is during the Super Bowl, the stores were desserted yesterday! We are not avid sports fans in my house - oh, what am I saying... the ONLY sport we compete in is eating! I do have to say I keep tabs more than I used and a more than my hubby appreciates so all I will say is GO PACKERS!!!!
Today consisted of black coffee with fat free creamer for breakfast - not much of an appetite this morning and it is all I had time for. Lunch was one of my staples and definately a favorite for me. Weight Watchers cheese and reduced fat Wheat Thins as well as light salame. I also had an apple.
I made my slow cooker Chicken Tortilla soup for dinner - this is so comforting and filling. It doesn't help that it is one of my families favorite meals. Made cornbread with low fat buttermilk to lower the points and topped my soup with shredded cheese and fat free sour cream.
Movie night with my BFF tonight - what should we have for a treat?? Popcorn, of course! Added some Reese's Pieces, 1 serving (15 pieces!) was 5 points. Perfect ending to my day.

Day 14
Sunday, February 6th 2011
2nd weigh in.... I was so hoping to lose the remaining 4 lbs to get under this digit. Did I do it, no.
I lost a 2.5 lbs for a total of 7 lbs in 2 weeks.... this is still great! I need to remember that life happens and so do mistakes. Each day is a new one and a new chance to succeed or fail, we chose the path we take. I am excited for 7 lbs down and know that next week will be another loss.
I don't know how I manage to not eat in the am.... by 2, I am starving. This needs to change! We got home from church and had our weekly egg brunch. I decided to have 2 eggs today as I didn't eat earlier. I love poached eggs! This is something new for me and a good change for me.
By late afternoon, I wanted something sweet. Curse you, cravings!! My daughter was eating oreos and I thought to myself - how many points are those? Double stuf oreos are 4 points for 2 cookies and reduced fat are 4 points for 3 cookies (is it sad I have both in my house?)
I guess the question is, did I eat them? Nope! I found a recipe on weight watchers for a strawberry frosty.... hey! There is my sweet fix AND a serving of fruit for the same amount of points. Loved it!
I started planning our next 2 weeks of meals yesterday and finished it up today (what a chore!!!) so we decided to go grocery shopping during the Superbowl since we are not all that into sports at my house. The stores were deserted, it was so nice but that didn't meant the trip would be a short one. 3 hours and 2 whiney kids and one frazzled mama later, we were home.
We didn't eat till late so dinner consisted of baked potatoes topped with turkey chili, cheese and fat free sour cream. Yum and totally filling for 14 points.
Yep, late night craving again - settled for cereal. I am determined to stop this.... I will try to make this my last late night post!

Day 13
Saturday, February 5th 2011
Busy day.... had to be somewhere by 9am and then had a Lia Sophia Party at my house at 11am. Grabbe a bagel thin with my sweet almond orange cream cheese as I walked out the door.
Lunch was a serving of cantalope at the party (no dip for me, way to go!) and leftover alfredo as soon as the house cleared out.
Tried a new recipe for dinner - Citrus garlic pork with roasted herb potato wedges and broccoli.
The pork was not my favorite, it had a strong grapefruit flavor and was overcooked (that was my fault) The potatoes were okay but reminded me of a Christmas tree and that made for hard eating.... don't think I am a huge fan of rosemary. Oh well, you live you learn I guess.
Ended up having a bowl of cereal after dinner - it tasted so good! 5 points and I didn't go over but this made me a little fearful for my weigh in tomorrow.... we will see.

Day 12
Friday, February 4th, 2011
The weekend!! Started the day with my oatmeal/toast/milk breakfast and got ready for another day of organizing and cleaning....
Leftover baked beef ziti for lunch - did I mention how great my hubby is for putting leftovers in cup sized portions for me. Perfect!
By dinnertime I was at 14 points and had quite a few left. I was feeling strained from the week of cleaning and organizing and after almost 2 weeks of dieting I was feeling kinda blah. My hubby also told me that his work was requiring a 50 hour (but to expect 60) work weeks for the next 2 weeks so I was not in the mood to cook knowing the next 2 weeks it would just be me preparing meals.
We had Burger King - yep, I caved. I didn't do too bad tho. I had a Whopper Jr (with cheese) and a small fry. This was a total of 19 points and I didn't go over for the day but about an hour after eating I was still craving something. I don't think I will do this again as I had some chocolate (4 points) and still wanted more! I decided to eat some fruit as I hadn't had much veggies/fruit today so I had an apple. I went over my points but had my weekly allowance but it didn't make me feel too great about myself. Oh well, new day tomorrow.

Day 11
Thursday, February 3rd, 2011
Woke up today not feeling wonderful and a lovely fever blister on my lip.... ugh! The last thing I wanted to do was bite anything.... Oatmeal it is! By the way, the lower sugar instant oatmeal is lower points then the high fiber. When I was getting breakfast ready, I grabbed 2 packets of the apples n cinnamon thinking that is what I usually have. Added the points and it was 3 points per packet, hmmm, I made one. 2 pieces of delightful whole wheat toast with I can't believe it's not butter and 1/2 a cup of milk. I was full and it was 7 points.
I didn't have much time for lunch - my cleaning spree continues so I had a serving of reduced fat wheat thins (16 crackers!!) and a wedge of laughing cow light spreadable cheese. This is a great snack, throw in an apple and I am completely satisfied for only 4 points.
Dinner consisted of my favorite new found pasta - Alfredo made with cauliflower - Yumm! I decided it was time to treat us to a dessert tonight. I found a fun recipe on Weight watchers for Strawberry Shortcake Kabobs. I made 4 of them at 4 points each. I cut strawberries in half and alternated those and cut up store bought shortcake (I used the mini cups found in the produce section) I cut them up into 6 pieces each and then drizzled with chocolate. This was a 1/2 cup of semi sweet choco chips melted with 1 Tbsp of butter. It was a yummy treat that my whole family loved.

Day 10
Wednesday, February 2nd 2011
Love me some bagel thins :-) I made a sweet almond orange cream cheese spread. Oh Heaven! It was 6 points for the bagel and spread.
Here is the recipe -
Sweet almond orange cream cheese spread
1 - 100% whole wheat bagel thin bagel
1/4 cup toasted whole almonds, chopped
1/2 cup golden raisins (I used craisins)
1/4 cup honey
8 oz reduced fat cream cheese
1 teaspoon orange zest
a pinch of salt (our almonds were salted so we omitted this ingredient)
Preheat oven to 400. Cook almonds ofr 5-7 minutes on a cookie sheet until they are fragrant. Remove and let cool to the touch. In a food processor add the cream cheese, raisins, orange zest and honey. Pulse to combine and scrap down sides if needed. Add almonds and pulse to combine into cream cheese mixture. Toast bagel thins and spread with 2 Tablespoons of spread.
There it is - so good and filling... I just have to be sure to not eat every morning.
I had leftover ziti for lunch - my hubby is so sweet, he made sure that there were 2 -1 cup servings in there for me. Love the support. I had some fresh pineapple as well and again, LOVE that I can have fruit whenever and I don't have to worry about the points.
Dinner consisted of an amazing new recipe as well - probably one of my top 5.
Baked creamy chicken taquitos. I found this recipe on a friend's blog site - she was a big inspiration for me. She started weight watchers about 2 weeks before and has been so positive and cute about it and also put her success and recipes on a blog.
Her blog is www.thepaysonolsens.blogspot.com The recipe for the taquitos and others are on there.... I did notice that the recipe called for cheese (besides the cream cheese) but it didn't have an amount. I added 1/3 cup of shredded mexican low fat cheese in there and it was 2 points for 12 servings. I also noticed that I liked the corn tortillas much more than the flour - man, that is insane!
Had points left and I let myself have a rocky road brownie - heaven on a plate, even with the tiny portion and to be honest, it was just enough.

Day 9
Tuesday, February 1st 2011
I can't believe it's February already! I LOVE February!!! It is my favorite month - my birthday, valentine's, and president's day (Joe home from work!)
This is also a very big eating month - all of those days are the perfect for eating. I am determined to get through this month without eating my way through it and fully enjoying turning another year older and hopefully another digit smaller. I am going to DO this!
I found a new found favorite breakfast food - Thomas bagel thins... they are so yummy! I love that I can have a bagel and it isn't a million points. I had this with peanut butter (gotta have the real stuff - so worth every point) and a banana with a 1/2 glass of milk.
We made a remade version of one of our household favorites - baked ziti. When we made this on a normal, non diet day it was full of ground beef, tons of tomatoes, seasonings, and a TON of mozzerella. The newer, lighter version consisted of the same ingredients except we used less meat, and less cheese. It still tasted amazing! The crazy part is when I picked up my 1 cup measuring cup and saw how small that serving was, I thought there was no way I would be full. I put that cup on my plate along with a salad topped with fat free italian dressing and sat down. I was FULL after that! I was so surprised.... I used to eat 2 or 3 times that amount in one sitting.
By the time evening hit, I still had quite a few points left. I was thinking hey, I can have a real bowl of ice cream and even make it a DOUBLE portion. LOL that freezer was calling my name! I fought my way to healthy snack - reduce fat crackers, light babybel wedge, and light salami. Protein is my friend and was so much better than what I had in mind.

Day 8
Monday, January 31st 2011
Monday, Monday.... is it weird that most people dread this day but for me, it is a new week and a chance for me to change things if needed.
My littlest is now walking almost all the time and I find myself chasing her around more than I ever did with the older one. Whew, it is tiring - do you think I can count it for activity points?
After my successful weigh in yesterday, I have started this week with gusto and a new excitement to see numbers like that at my next weigh in. I do have a confession tho - I LOVE cereal... I could eat it anytime of day but I love it at night most. This is something I have steered clear from since I started this journey and it has been a challenge. I do have say, that absence of cereal has made it all the more enjoyable at breakfast.
I had special K with red berries and milk for breakfast - mmmm, 5 points. I ate at 10am so lunch was a little later, after 3pm. I did lose track of time as I was cleaning (and I mean CLEANING) my littlest room.... I will explain. She is almost 16 months old and our last baby. I don't quite know how to deal with this so I really haven't. I still had clothing in her room from 3-6 months! I wasn't even using her dresser as it was full of clothes that were too small. I have officially finished that 2 day task. 6 totes have been taken to the basement and 3 garbage bags ready to go to D.I. Whew! Who has time to eat when you are this busy??
I had leftover lemon pasta, a yogurt and an apple for lunch... that pasta is sooo good, even re heated. It is 8 points but paired with yogurt and the apple lunch was still under 12 points.
I was working in the office when the hubby got home from work -I think he is still in shock over my working skills the past week...my house hasn't seen clean like this in a while. I was able to get all my files put away for 2010, made sure all info was deleted that needed to be, and I now have all my info ready for taxes including a spread sheet for my mileage.
Dinner was at 7 30. Fish Tacos! Joe found some Van De Kamps' breaded fish (I think it is called healthy select) for 5 points a serving - 2 pieces. We baked that, made an amazing sauce that consisted of spices, sour cream and lime and heated some corn tortillas and veggies. It was yummy and I was able to eat 4 tacos! Wow, was I full but I knew my night was far from over.
I went to my BFF's for a girl's night in.... Cougartown, how I missed you!
I knew I would want to snack so I baked some Rocky Road brownies (love you, weight watchers recipes!) and took some Healthy pop 94% fat free popcorn with me to make sure I ate something that I knew would keep my points in check. 2 brownies and 3 cups of popcorn - 10 points and Voila! That was the end, my friends.

Day 7
Sunday, January 30th 2011
Weight in - wanna know?? I mean do you REALLY want to know?? Well, I sure did! I have been measuring and doing low fat this and fat free that all week. It wasn't all bad tho, I mean I can honestly say that I have eaten more fruits and veggies this week then I have in long time and even better - my house is cleaner then it has been in months! No more chillin in front of the TV, zoning out and eating my way to another size.
Ok, back to what you are are waiting for. Drum roll, please....... I lost 4.5 lbs!
Did you hear that, 4.5 lbs in WEEK! I can't even tell you how excited I was! If I lose another 4.5 lbs this week, it will be a thing to celebrate. I will be below the number I swore I would NEVER hit (which I have plus 7 lbs.) I can't wait to see that new digit.
I have to say, breakfast is still a challenge for me. I thought when our church time changed from 9am to 11am the beginning of this month that I would have plenty of time..... nope. I still managed to walk out of the house in rush, with nothing but a mint in my tummy. We make our weekly breakfast on Sunday - the eggs, bacon, potatoes and toast, it is something I look forward to and I can honestly say today was no different and that is such a great thing. I got my egg, canadian bacon and toast today and it was great.
I wanted something sweet a few hours after our late breakfast and realized I wanted a shake.... and how does that happen... with light coconut milk, of course! I had a great pineapple coconut smoothie made with just that, coconut (milk) and pineapple chunks in their juice. Added a bit of frozen orange juice concentrate and ice. We wanted a bit more coconut flavor and put in a bit of Capella's pina colada drops and 2 packets of Truvia. Ahhh, that hit the spot.
Dinner was bit later - just finished actually. we had spice beef tacos and there was nothing wrong with this at all. When I saw the recipe it was 2 corn tortillas for 7 points and I thought that will work. But when I read the measurements for the toppings I thought there was no way that would be enough. It called for 1/4 cup of meat, 1/4 cup of lettuce and 1 T of cheese. Well, I will give some credit to those great Weight Watcher recipes again... I actually used less than called for toppings and was able to add another taco for an addtional 1
1 point. Love feeling this full and having my food full of flavor. We added cilantro, tomatoes and sour cream (daisy fat free is the BEST and 0 pts.)
Now I have 18 points left for dessert.... is is sad that I automatically thought that is 3 bowls of cereal?? LOL oh well, I am thinking strawberry shortcake kabobs might work a bit better. What do you think??

Day 6
Saturday, January 29th 2011
I love the weekends - I love the time with my family, all 4 of us being together and enjoying each other. What I don't love is the chore list that comes with it. I do find some positive out of it.... first, the results are always so great and secondly, it keeps me distracted so I don't eat.
I had to go through a box that was incredibly overwhelming today - all my reciepts and statements for the entire year of 2010. My hubby armed me with a peanut butter chocolate smoothie and I set to work. As I was working on this task, taking up the whole kitchen table to do so, I swore it would not happen this year. Who wants to hold me to this??
My bro, his wife and 3 awesome kids came over for dinner.... pizza and movie with them - the BEST!!!
Joe made pizza (I LOVE his pizza!) I had 4 slices - 2 of each kind, and a few carrot sticks, no ranch for me. We also had beignets that we made last week that we reheated and made icing for - doughnuts are my fav. I had 3.
Yes, today was over my points but I am not hungry and I can say that I really enjoyed my food, didn't over eat and by no means feel deprived.
Here's to a successful weigh in tomorrow!!

Day 5
Friday, January 28h 2011
Today I had a pajama party with my little girls - we stayed home and watched movies in our PJ's all day.... she thought is was the coolest thing and let's face it, it was a glorified way for me to not get ready today!
My little ones wanted waffles today and my immediate response was - No, I can't handle you having those and I can't! But then I thought about it and realized I could have them.... Oh, happy day! I had purchase the nutrigrain low fat waffles and it was 4 points for 2 waffles. I topped with spray butter and Aunt Jemima butter lite syrup (the best in my opinion) I paired this with some canned tropical fruit (drained and rinsed) and a half cup of milk. We were a group of sugary, sweet little girls for breakfast.
I wanted to keep my points low today because it's Friday and I have a Date In with my hubby. He picked up a movie on his way home and I put some Junior Mints (16 mints for 3 points!) in the freezer this morning, I will explain.... we make popcorn and eat it with the frozen Junior Mints, not just with it but in the same bites. If you haven't tried this you are probably thinking WHAT?! but trust me, it is the BEST!
Dinner consisted of Pan seared chicken with garlic sauce, lemon pasta and broccoli. The chicken and pasta were both new recipes - thank you, weight watchers online! I am usually not a huge fan of garlic and when I saw that this recipe called for 12 cloves of garlic I was hesitant but we tried it anyway... so glad we did! The chicken itself was seasoned and quite honestly it was a little too much but the sauce rocked. The pasta was a new one for me... it had an egg in it. Ummm, yea that freaked me out a little. I trusted it and again, so glad. Yummy dinner with 10 points left for our movie!

Day 4
Thursday, January 27th 2011
So today was a whirlwind - I felt like I was running around until Joe got home from work. I grabbed a babybel cheese and a raisin oatmeal bar on my way out at 11 30 cause I just hadn't had time to eat breakfast. 4 points down.
I was thrilled to go to lunch with my sis today - love those outings however, the kids make it a little hectic but hey, we are never short on excitement! We were stumped on where to go.... on a non diet day we don't have this problem but when you are trying to count these points, it makes you really think what you are putting in your mouth.
We went to Zupa's and it was devine! I had the tomato basil soup and a sandwich. I had checked online and found the points for the soup but that was it. When I ordered my meal, they asked if I wanted the orzo pasta that came with my soup, I said no. I was then asked if I wanted cheese or sour cream, again I answered no. It's crazy how fast those points and calories can add up when you aren't paying attention. I also got the Turkey Spinach Artichoke panini - I had no idea how many points is was but man, it sounded awesome. I ended up eating half of my sandwich and soup...again, by paying attention I saved eating more and adding more points. Still questioning the points on the sandwich but from what I can tell, it was probably 9 per half.
We had baked salmon with dijon topping for dinner. I paired it with a baked potato and an artichoke. I topped my potato with the fat free stuff but used 2 tsp of mayo for the artichoke. I ended up eating only 1/2 of my mayo serving so... wahoo! It was 15 points for dinner so all in all, my 2 meals were more than average but hey, I still have 6 left for dessert :)
I am thinking one choco-peanut butter cookie (2pts) and a ice cream sandwich (4 pts)

Day 3
Wednesday, January 25th 2011
I have to admit something - I weighed myself today... I was scared but was thrilled when I saw I lost 2.5 lbs!
I decided this morning I wanted to make myself a BIG breakfast, too bad I didn't get to it until 11:30AM! I need to work on it, I need to work on getting up earlier and eating when I get up. Anyway, back to breakfast.... I made toast, bacon, eggs and strawberries. How's that for a breakfast - this diet is all about changing the food and lowering portions, no need to neglect yourself. I used canadian bacon, Sara Lee wheat bread, and had one egg.
Lunch was challenge - because I ate so late in the day, I didn't eat before I took the girls to the movie for a birthday party. I got a small popcorn and rootbeer for my 4 year old - the girl behind the counter made sure to tell me a medium popcorn was only 75 cents more - it is crazy how we pay to get more food when in reality, we dont need it. I ate a babybel on the way to the movie and snuck in a few treats for me so temptation wouldn't be bad. I did have a few handfuls of popcorn but nothing like the normal case. We left that theater with over 1/2 of a SMALL bag left - All I can say is WOW!
Dinner was nachos - much anticipated and very good. I found the basis of the recipe on a friend's blog and that was awesome. We made chips out of our corn tortillas - 1 point per tortilla, that makes 8 chips! It was 10 points for a full plate of food.
I am now drinking my chocolate fix for the day - General Mills International House swiss mocha (sugar free) MMM, only one point!! I have 9 left and am trying to figure what to do with it....
I found a recipe for Chocolate and Strawberry stuffed french toast - I had a request to post it so here it is...
http://www.foodnetwork.com/recipes/chocolate-and-strawberry-stuffed-french-toast-recipe/index.html
Can you believe it is only 6 points for 2 pieces of this lovely breakfast!!! I just hope it is as good as it sounds.

Day 2
Tuesday, January 25th, 2011.
Today I realized I was more bored then hungry but found myself wanting to sit on the couch, turn on an episode of Cougartown, and eat. I decided totake my sister's idea from a blog she recently found and I made myself a chore chart and a list of all the projects that need to be done around my house. When I found myself wanting to eat, I referred to my list. I cleaned my 3 bathrooms, steam mopped the floors, and cleaned out the cupboards and storage totes in those rooms. YAY ME!!
I had yogurt and an oatmeal raisin bar for breakfast, leftover soup for lunch and an amazing dinner. I found a recipe on Foodnetwork.com for a healthy fettichini alfredo made with califlower puree.
http://www.foodnetwork.com/recipes/food-network-kitchens/fettuccine-alfredo-recipe2/index.html
I do NOT like califlower and find myself not getting enough veggies so I thought this might be a good idea. Joe made this while I was at a meeting and also made bleu cheese dressing from a recipe I found on weight watchers. We paired that with a green salad and the pasta and it was DELISH!!! The pasta was 8 points. I finished off my day with a cookies n cream shake made with fat free frozen yogurt and reduced fat oreos and had 3 points to spare.

Diet road... again.
I have spent most of my adult life not liking what I see on the scale. Don't get me wrong, I am not the type of person who stares at the mirror, hating the person staring back at me. I like to think I am comfortable with myself and all that makes me who I am. I just dislike how much of me there is.
I started another diet - again. I am hoping my monitoring my progress/ failures and putting out for all to see I might be more accountable for what goes into my mouth.

I am at my highest weight, ever. I decided to sign up online with Weight Watchers and see how I do... I don't know if it because I signed up and am now invested or if it is because I am sick of carrying around this heavy girl but I am excited for this journey.
Day 1 - I am proud to say I used all my points which was no small task considering I had 28 left at dinnertime! I had 2 servings (1 cup each) of my slow cooker chicken tortilla soup which was 6 points per serving. I added 1 serving of cheese and sourcream between the 2 bowls and a peice of cornbread. I then went to the store to pick up all the food I would need for the next 2 weeks, came home, and treated myself to a skinny cow chocolate peanut butter ice cream sandwich... 4 points and worth every one!
I got a bunch of things at the store and the Weight Watchers app for my iPod was totally helpful and made it so easy to find the points for food while I was there.
I LOVE this plan having fruit as 0 points! I was a little bummed as it is winter so we basically get apples, oranges, and bananas or pay an arm and a leg for the others. I then found out that if I get canned fruit (pears, peaches, fruit cocktail) in water or if I drain and rinse them, they are still 0 points. YAY!!
